1 cup of Chelsea Jam Setting Sugar
1/2 cup of brown sugar
Zest and juice of 4 lemons and two oranges
4 eggs beaten
1. Heat the butter on low in a saucepan. When the butter has melted, add the sugar and lemon juice and zest and stir until the sugar has completely dissolved.
2. Pour a little of this mixture into the beaten eggs and mix with an electric beater on low.
3. Pour it back into the saucepan and return to the heat and stir for a few minutes until it thickens. It will thicken more as it cools.
4. Pour into a sterilised jar and seal the lid firmly.
Allow to cool then enjoy and devour 🙂
